Summer coolers - Dairy free Thandai

Thandai was one of the most cherished recipes in the cooking class of March 2017 conducted by Dr. Namrata Lohade at the other song as part of an educational event at the holistic clinic. A festive delicacy and wonderful summer cooler, it packs a sumptuous health punch with every sip. Here's a guide to your quick and easy dairy free thandai that all of you can sip on this summer! 



Ingredients:

Almond milk (Recipe given below) – 2 cups
Cardamom(elaichi) powder -  1/8 tsp
Poppy seeds (khus khus)- 1/2+ tsp
Fennel seeds (saunf) - 1/8 tsp
Black peppercorns (kali mirch) - 3-4
Saffron(kesar) -  1/4 tsp
Dry watermelon seeds – 1tsp
Date Paste – 2-3 tsp
Nutmeg (optional)



Method:

1. In a blender, add the dry ingredients & grind well.
2. Add 1/2 cup Almond milk and blend well until smooth.
3. Add about 1 cup more almond milk and date paste as needed sugar. Blend and chill for at least an hour, to let the spices infuse in the drink.
4. Give it a mix before serving. Garnish with chopped pistachios and a few saffron strands, rose petals.
