Puran Poli
Ingredients:
1 ½ cup chana dal (yellow gram)
1 tablespoon cardamom powder
1 ½ -2 cups Dry date (kharik) powder/ date paste
1 cup Whole wheat flour
Cashew butter for serving.
1 pinch of rock salt
Method
For Puran /Stuffing
Steam chana dal in lots of water till it gets soft but ensure that it does not get broken. Drain for 10 to 15 minutes in a strainer. Let it through an almond grater in small quantities till all of the dal is grated. Mix dry date powder/date paste well with dal. Put this combination in a heavy saucepan. Keep cooking till a soft lump gets formed. Stir continuously with care so that it does not get charred. Leave it for a while and turn to prepare dough.
Dough for Poli
Mix cashew/sesame butter and flour and add only so much water that is necessary to make the dough soft. Take one bit of ball which can be rolled into a 4 inches round. Make the round piece of dough.
1. Prepare small balls of stuffing. Divide the dough into small balls and flatten them.
2. Put the stuffing ball in the dough ball and seal it with other side of the ball.
3. Make a proper round of the stuffed dough and prepare a thick puri with it.
4. Dry Roast till golden brown on a warm griddle (Iron Tawa). Repeat the same for the other side.
5. Apply one tablespoon of cashew butter throughout the top. Take a serving plate. Serve hot with amti or dal.
Note: The water drained out from boiled dal can be used for making the amti. Its ingredients are garam masala, black masala and mashed dal to prepare a thin curry.
